Saturday breakfast!!!

06/12/2025

Ingredients (serves 1–2)
• 3 large eggs
• 1–2 sausages, sliced (any kind you like: chicken, beef, or pork)
• 1/4 cup bell peppers, chopped
• 1/4 cup onion, chopped
• 1/4 cup tomatoes, chopped
• 1/4 cup spinach or any leafy green (optional)
• Salt and pepper, to taste
• 1–2 tsp oil or butter
• Optional: shredded cheese for topping

Instructions
1. Prepare ingredients:
Slice the sausage and chop all the vegetables.
2. Cook the sausage and veggies:
Heat a non-stick pan over medium heat and add 1 tsp oil.
Add the sausages and cook for 2–3 minutes until slightly browned.
Add the onions and bell peppers, sauté for 2 minutes until softened.
Add tomatoes and spinach (if using) and cook for 1 minute. Remove from pan and set aside.
3. Beat the eggs:
In a bowl, crack the 3 eggs, add a pinch of salt and pepper, and whisk until slightly frothy.
4. Cook the omelette:
Add a little more oil or butter to the pan. Pour in the beaten eggs and let them cook for 1–2 minutes, gently lifting edges to let uncooked egg flow underneath.
5. Add filling:
Once the eggs are mostly set but slightly runny on top, add the cooked veggies and sausage on one half of the omelette.
6. Fold and finish:
Fold the omelette over the filling and cook for another 1–2 minutes until fully set. Optional: sprinkle cheese on top before folding.
7. Serve:
Slide onto a plate and enjoy hot, optionally with toast or a side salad.

Oat and banana pancake 🥞!!

Ingredients (makes 2–3 pancakes)
• 1 large ripe banana
• 1/2 cup rolled oats (or quick oats)
• 1/2 cup milk (dairy or plant-based)
• 1 large egg
• 1/2 tsp baking powder (optional, for fluffier pancakes)
• 1/2 tsp cinnamon (optional, for flavor)
• 1 tsp vanilla extract (optional)
• Pinch of salt
• Butter or oil for cooking

Instructions
1. Blend the batter:
In a blender, combine the banana, oats, milk, egg, baking powder, cinnamon, vanilla, and salt. Blend until smooth. Let it sit for 2–3 minutes to thicken slightly.
2. Heat the pan:
Place a non-stick pan or skillet over medium heat. Add a little butter or oil.
3. Cook the pancakes:
Pour small amounts of batter into the pan to form pancakes. Cook for 2–3 minutes, until bubbles appear on the surface, then flip carefully. Cook for another 1–2 minutes until golden brown.
4. Serve:
Serve warm with honey, maple syrup, fresh fruits, or yogurt.

💡 Tips:
• For extra protein, add a scoop of protein powder or a tablespoon of nut butter to the batter.
• If you want fluffier pancakes, separate the egg white and yolk, whip the white, and fold it in at the end.
