EVERYTHING YOU NEED TO KNOW ABOUT CABERNET FRANC, CABERNET SAUVIGNON, CHARDONNAY, RIESLING AND ROUSSANNE (By Dr Nenad Jelisic)
Cabernet Franc, a red wine grape. Nutrient poor soils with good drainage properties (for example, sand, gravel and limestone-rich soils) are an ideal habitat for the grape. Cabernet Franc, which is correctly grown and at the right place (for example, Saint Émilion appellation in France) gives tannin-rich and ageable wines, wines with flavour and aroma of violets, roses, lavender, basil, coriander, sage, to***co, blackcurrant, raspberry, red cherry and red plum. When Cabernet Franc does not get enough the sun, it gives the wines that smell and taste of unripe peppers (paprika).
Cabernet Sauvignon, a red wine grape. Nutrient poor soils with good drainage properties (for example, gravel) are an ideal habitat for the grape. Cabernet Sauvignon, which is correctly grown and at the right place (for example, Napa Valley wine district in USA) gives tannin-rich and ageable wines, wines with flavour and aroma of black currant, plum, raspberry, herbs, liquorice, and, over time, of cedar, to***co, dried fruits and coffee. When Cabernet Sauvignon does not get enough the sun, it gives the wines that smell and taste of unripe peppers (paprika).
Chardonnay, a white wine grape. Calcareous soil mixed with clay (for example, Kimmeridgian soil; mixed soil, which consists of marl and limestone and which is rich in fossils of small oysters) are an ideal habitat for the grape. Chardonnay, which is cultivated in the right way and at the right place (for example, Chablis wine district / appellation in France) gives ageable, dry, fresh, aroma rich and flavour rich wines, wines with aroma and flavour of apple, vanilla, honey, lemon, wet stones, smoke, butter, nuts and minerals. Wines with a long aging potential, over time, start to smell and taste banana, pineapple and mango.
Riesling, a white wine grape. Nutrient poor and mineral-rich soils with good drainage properties (for example, weathered magmatic and metamorphic rocks) is an ideal habitat for the grape. Riesling grown on clay gives the most powerful Riesling-wines, while it grown on weathered magmatic and metamorphic rocks gives Riesling-wines with great flavour and finesse. Riesling, which is cultivated in the right way and at the right place (for example, Mosel-Saar-Ruwer wine region in Germany or Venje appellation in Croatia) gives ageable, dry and fresh to very fresh wines, wines with flavour and aroma of citrus fruits, yellow pears, yellow apples, honey, nectarines and minerals. Wines with long aging potential, over the years, often begin to smell and taste petroleum.
Roussanne, a white wine grape. Weathered granite and weathered gneiss are ideal growing conditions for the grape. Roussanne, which is grown properly and at the right place (for example Saint Joseph appellation in the Northern Rhône in France) gives dry, fresh to very fresh, full-bodied, fruity, aromatic (apricot, peach, ripe yellow pear and hawthorn) and flowery (honeysuckle, herbal tea, wildflowers, chamomile and narcissus) wines. Wines that have a long aging potential, over time, begin to smell and taste honey, beeswax, marzipan and roasted nuts.
