Den Bryggande Holländaren Craft Brewery. Handcrafted all the way Jag heter Wilbert Duijvesteijn och det är jag som är 'Den bryggande holländaren'.

För några år sedan flyttade jag hit från Rotterdam tillsammans med min fru Theresa McGovern. Det dröjde inte länge förrän vi blev inspirerade till att väva samman svenska och holländska öltraditioner och nu har vi tillsammans startat ett bryggeri. Vi kommer att överraska ölälskares smaklökar med helt nya ölstilar som knappast kan sägas falla in under någon specifik kategori. Vi kommer i stor mån a

tt arbeta med lokala råvaror och tror på en kreativ bryggning där man tänjer på gränserna utan att förlora balansen.

I enjoy both sides of brewing: brewing the perfect, clean lager in a professional setting where you have total control over the process, and brewing a perfectly good beer on an open fire with homegrown hops, which demands more skill.

One of the most critical things is making sure you break down all your starches. Brewing with this BrewTaurus when it's filled to the rim is already hard enough because of the basket, but on an open fire, the thermometer on the outside might read 80°C, while inside your mash it's only 60°C.

You have to anticipate the rise in heat, which can be fast, and constantly stir and measure.

I really enjoy it, it's an activity best combined with good company and random conversation.
