The coffee for The Fermentation Project sell fast and we look forward to share these four coffees with all of you. We did a test batch this week to set the roast profile, and we will roast the remaining 30kg of each coffee in the coming week.
One farm, one roast profile, four different ways to ferment of the fruit from the bean. How does this affect the flavour?
The process method for these coffees is what is normally called “Washed coffee” and the fermentation that is done happens in the fermentation tanks after pulping, before washing and drying. Differensens might be delicate but the post harvest process by Lucia Solis is well controlled and conducted.
