Creamy Tomato Soup

Ingredients:
• 2 tomatoes (chopped)
• 1 tsp ginger (finely chopped)
• 1 tsp garlic (finely chopped)
• 1/2 tsp chili (finely chopped)
• Salt to taste
• 3 tsp sugar
• 1/3 tsp black pepper powder
• 1.5 tbsp butter
• 1/2 tbsp fresh cream
• 1 tbsp tomato ketchup
• 1 tsp cornflour

Method:
1. Chop the tomatoes finely.
2. Heat butter in a pan and sauté garlic, ginger, and chili for about 30 seconds.
3. Add the chopped tomatoes and salt, and cook for 3 minutes.
4. Pour in 3 cups of water and boil for 5 minutes. Blend, then Strain the mixture and add 1 cup of water to the strained liquid.
5. Bring the strained soup back to the pan. Dissolve the cornflour in 1/4 cup of water and mix it into the soup.
6. Add salt, black pepper powder, sugar, and tomato ketchup. Let it simmer for 2 minutes.
7. Stir in the fresh cream and serve hot.

Chicken Tikka Masala Recipe

Ingredients
• 600g boneless chicken
• 3 tablespoons white oil
• 3 tablespoons onion paste
• 2 tablespoons ginger paste
• 2 teaspoons garlic paste
• 1 teaspoon garam masala
• 1 teaspoon turmeric powder
• 1 teaspoon coriander powder
• 1 teaspoon Kashmiri red chili powder
• 1 tablespoon tomato puree
• 1 tablespoon yogurt (sour)
• 1 tablespoon fresh cream
• Salt and sugar to taste
• Coriander leaves (for garnish)

Instructions
1. Marinate the boneless chicken with white oil, yogurt, and fresh cream. Let it rest for 1 hour. Microwave the marinated chicken for 5 minutes.
2. Remove the chicken and mix it thoroughly with all the spices: onion paste, ginger paste, garlic paste, garam masala, turmeric powder, coriander powder, Kashmiri red chili powder, and tomato puree.
3. Add salt and sugar as per taste and microwave again for about 6 minutes.
4. Stir well, add a little more white oil, and microwave for another 10 minutes, keeping it covered.
5. Once the oil starts to separate, remove the dish from the microwave, garnish with coriander leaves and fresh cream, and serve hot.

Veg/Eggless Muffins

Ingredients:
• Flour: 1 cup
• Grated carrot: 1 cup
• Icing sugar: 1 cup
• Liquid milk: 1/2 cup
• Salt: A pinch
• Baking soda: 1/2 teaspoon
• Baking powder: 1 teaspoon
• Strained sour yogurt: 1/4 cup
• Vanilla essence: 1/2 teaspoon
• Melted butter: 4 teaspoons
• Raisins: 1 teaspoon
• Chocolate chips: 2 teaspoons
• Tutti-frutti: 1 teaspoon

Preparation:
1. First, mix all the dry ingredients together and sift them through a sieve.
2. Whisk the yogurt, melted butter, vanilla essence, and milk thoroughly.
3. Add the sifted flour mixture into the wet mixture using the cut-and-fold method. Beat it for 8–10 minutes to combine well.
4. Mix the grated carrot into the batter, whisk again, and then fold in the raisins and chocolate chips.
5. Brush muffin cups with oil or butter and fill them halfway with the batter. Sprinkle a bit of cherries, tutti-frutti, and chocolate chips on top. Tap the cups twice to settle the batter.
6. Preheat the oven to 170°C. You can also prepare this on the stovetop by using a thick-bottomed high-sided pot with a stand. Preheat the pot on low flame.
7. Bake the muffins in the preheated oven for 20–22 minutes. Check doneness with a toothpick; if it comes out clean, the muffins are ready. If not, bake for a few more minutes.
