I produced this Malt Spirit earlier this year and released 1200 bottles in September. It's a bit unusual because I made it using high frequency ultrasound, blasting the toasted oak chips and the peated barley and the high frequency sound waves take out the flavor esters on a molecular level. Basically I make something that tastes very much like a 5-year-old whiskey in about 10 hours. But I can't call it whiskey because it needs to be aged in barrels for 3 years to have that title. So instead I called it Skånsky. Well let me just say it's been very popular and it's selling fast and I expect to sell out by New Year's. So if you haven't tasted it and you'd like to get a bottle, now's the time.
