The Ellegala family has tended the same forest in the highlands of central Sri Lanka since 1896. What they’ve built around it is something rarer than most certifications can capture.

works with a network of smallholder farmers, all within a few kilometres of their processing centre. Neighbours, essentially, who grow and harvest together. The founder Nihal also leads The Forest Healing Foundation, replanting trees and restoring degraded land rather than expanding production .

That’s regenerative farming in practice: giving back more than you take. Rebuilding soil, protecting biodiversity, keeping the ecosystem intact for the next harvest and the one after that.

The result are spices that taste uniquely like where they come from. Earthy, tropical, vibrant, seasonal. Their new harvest just arrived.

Ceylon cinnamon, cardamom, ginger, turmeric, black pepper, cloves and Polwaththa Curry Powder and more.

Single origin. Grown with intention. Knowledge and money reintegrated into the community they support.

A new everyday hero.

This is Ragù, our new blend for köttfärssås, lasagne and slow-cooked ragù.

Built for the kind of cooking that happens often. The weekday pan, the family pasta, the dinner that needs to come together quickly but still carry proper flavour.

Sausages from Köttkompaniet seasoned with spices from The Pepper Quest.

Together with Emir and the team, we’ve spent time refining the seasoning of several sausages in the Köttkompaniet range using spices from The Pepper Quest collection.

The range now includes spices such as our Szegedi paprika from Hungary (.ab), black Kampot pepper from Cambodia and Silk Cut Biber from Turkey - bringing warmth, floral heat and a softer lingering chili character to the sausages.

Such an honor and big thank you for having our flavorful spices on your mind. We had goosebumps the whole presentation through. Amazing that our partner farmers produce from the hilly jungles of Sri Lanka and Vietnam reached all the way to the mouths of the Nobel guests. Their dedication to cultivating so high quality always blows our mind. They were so happy to hear about the news!

Ever since you came and grinded the Gansu Da Hong Pao Sichuan pepper over our dessert at Aira we have been so impressed by the way you think about flavors and apply them in you creations.

5spice Pork belly, always a crowd pleaser.

5spice inspired Rub of cinnamon, cloves, black pepper, salt, Sichuan pepper, star anis, cumin, coriander seeds. Coat the whole piece. Poke wholes in the skin. As many as you can.

Sauce: Mix together soy spice, vinagear, sesame oil, tamarind paste, fish sauce and pour it over the piece in a deep oven casserole. Add some water.

The exact proportions are, as always, to taste – balance, creativity and preference is key, not measurement.

Make sure you guard the crisp like your life was dependent on it...

Make a glaze of the sauce. A bit of sugar and extra ginger + cornstarch.

Enjoy with bowl of rice and lots of glaze and coriander.
