Pizza Skagen đđŠ
Skagenröra (Skagen mix) is a major Swedish classic created by the godfather of Swedish cuisine, Tore Wretman. Its a timeless classic for a reason and this time Iâm pairing it with pizza which worked out super well. Try it out, itâs an absolute winner and perfect for a date night! đ
đŠÂ The Skagen mix is made with about 200 g peeled shrimp (about 7 oz), mixed with 2 tablespoons mayonnaise, 1 tablespoon sour cream, 1 teaspoon freshly grated horseradish, and 3 tablespoons finely chopped dill. Add a squeeze of lemon juice and a little lemon zest, season with salt, and mix until well combined. Gently fold in the shrimp and taste, adjusting seasoning if needed. Set aside until ready to use.
đ„ Using a mandoline, slice one potato very thinly. Place the slices in a bowl of cold water and let them soak for about 30 minutes to draw out excess starch. Drain and pat dry before using.

 Finely chop half a red onion. Melt butter in a pan and cook it until it turns golden brown and smells nutty, then remove from the heat. Keep the chopped red onion ready for topping.
đ Stretch the pizza dough into a nice, round pizza. Spread a thin layer of sour cream over the dough, then arrange the potato slices on top. Drizzle generously with olive oil and sprinkle with sea salt. Bake the pizza at the highest temperature your oven allow on the top rack until crisp and golden, preferably using a pizza steel or stone.
đ Once baked, top the pizza with generous spoonfuls of the Skagen mixture, drizzle over brown butter, and scatter the red onion and some fresh dill on top. Brush or drizzle olive oil around the crust, then finish with a final squeeze of fresh lemon juice đ.
