Pizza Skagen 🍕🩐

Skagenröra (Skagen mix) is a major Swedish classic created by the godfather of Swedish cuisine, Tore Wretman. Its a timeless classic for a reason and this time I’m pairing it with pizza which worked out super well. Try it out, it’s an absolute winner and perfect for a date night! 🙏

🩐 The Skagen mix is made with about 200 g peeled shrimp (about 7 oz), mixed with 2 tablespoons mayonnaise, 1 tablespoon sour cream, 1 teaspoon freshly grated horseradish, and 3 tablespoons finely chopped dill. Add a squeeze of lemon juice and a little lemon zest, season with salt, and mix until well combined. Gently fold in the shrimp and taste, adjusting seasoning if needed. Set aside until ready to use.

đŸ„”Â Using a mandoline, slice one potato very thinly. Place the slices in a bowl of cold water and let them soak for about 30 minutes to draw out excess starch. Drain and pat dry before using.

🧈🧅 Finely chop half a red onion. Melt butter in a pan and cook it until it turns golden brown and smells nutty, then remove from the heat. Keep the chopped red onion ready for topping.

🍕 Stretch the pizza dough into a nice, round pizza. Spread a thin layer of sour cream over the dough, then arrange the potato slices on top. Drizzle generously with olive oil and sprinkle with sea salt. Bake the pizza at the highest temperature your oven allow on the top rack until crisp and golden, preferably using a pizza steel or stone.

🍕 Once baked, top the pizza with generous spoonfuls of the Skagen mixture, drizzle over brown butter, and scatter the red onion and some fresh dill on top. Brush or drizzle olive oil around the crust, then finish with a final squeeze of fresh lemon juice 🍋.

How do you summarize a year in 20 pictures? Its damn near impossible 👇

2025 turned out to be a year to remember. In February, I lost my job which turned out to be the best thing that could’ve happened to me. It gave me the kick I needed to follow my dream. My dream: to work for myself, create maximum freedom for myself, and build something around my greatest passion: food.

For a long time, I’ve been searching for what I truly want to do with my life. In my case, it has never been about having too few interests, but rather too many. I’ve always been fairly creative, drawn to music and later film/video, but I never felt fully fulfilled. In the background, my love for food was always there and when I lost my job, there was no other option but to go all in.

Food connects all the senses. It creates adventure. Through it, you experience countries, culture, history, and community. It can be both high-end and down-to-earth and contains everything you need and can be anything you want it to be. This might sound cheesy, but it really is the ultimate gesamtkunstwerk (total work of art) that unites us all. You can become incredibly knowledgeable, yet never fully learned. It’s endless in the best possible way.

My goal for the year was 10,000 followers. It became 21K with over 3 million monthly views. I’ve met amazing people I used to, and continue to look up to. People who share the same passion and drive with a positive mindset. I honestly can’t imagine anything more inspiring. Career-wise, everything finally fell into place.

I cooked a fair amount of food, ate at incredible restaurants in different countries, spent time in the mountains and in nature, foraged berries and mushrooms, harvested vegetables, and, for real, came to appreciate how beautiful Sweden is in all its seasons. I finally made the long awaited trip to Japan and visited my favorite city, Seoul, for the second time. I am so incredibly grateful 🙏
