This Mother’s day, we’re doing a little more for Mum. Introducing our newest addition to the menu: Wild-caught US scallops paired with tiger prawns. Delicate and buttery.

Tellicherry pepper is widely considered the finest grade of black pepper in the world by chefs and connoisseurs. Rather than being a different species, it is a size-based classification of the largest and most mature berries from the Malabar Coast of Kerala, India.

Why It Is Considered "The Best"?
The reputation of Tellicherry pepper comes from specific quality standards and flavor characteristics:

Size & Rarity: To be classified as Tellicherry, a peppercorn must be at least 4.25 mm in diameter. The highest grade, Tellicherry Garbled Special Extra Bold (TGSEB), is 4.75 mm or larger and represents only about 1% of the annual crop.

Maturity: These peppercorns are often left on the vine longer to fully ripen. This allows them to develop higher oil content and more complex sugars, leading to a more nuanced flavor profile.

Flavor Profile: While standard black pepper is often just "hot," Tellicherry is prized for its complex, bright notes of citrus, pine, and fruit, paired with a mellow, slow-building heat.

Terroir: True Tellicherry pepper carries a Geographical Indication (GI) tag, ensuring it is grown in the mineral-rich soil of Kerala's Malabar region, which is historically renowned for superior pepper production.
