A Japanese-inspired brand, CHU is named after the Japanese characters “チュ” (CHU) which is slang for the sound of a kiss. This expression represents an adorable reaction to anything that is extremely pleasing and delicious beyond words. As food lovers ourselves, our goal is to make "CHU” the standard reaction to our premium soup bases.

The Japanese Teapot soup is one of our most well loved soup. I wanted to recreate the taste that Peter and I tried in a small shop in Osaka. We used a kombu (not seaweed) base for it. The tricky part is over-extracting it. You want that balance of kombu and aroma. I felt that out of all the soup, this was the hardest to get right. Its a thin line between clean umami and MSG laden. But we nailed it an that is why our customers love it.

The last of our delectable pineapple tarts. We drew inspiration from the iconic Taiwanese Pineapple Cakes.

Taiwanese pineapples are renowned for their exceptional sweetness and tastes very clean. I’ve also learnt that while normal pineapples can smell very good raw, once you cook it, the smell becomes flat. But Taiwanese pineapples has a strong top-note aroma (that’s what it’s called!) which survives cooking.

CHU Collagen Crispy Rice Puffs were inspired by the pao fan craze of 2022–2023. We initially planned to release just the Original flavour. Something clean, comforting, and familiar.

One night, as I was queueing up for my seaweed shaker fries, it hit me: that addictive, savoury shake…why couldn’t it work on crispy rice?

Our mochi noodles were inspired by a humble ramen shop in Japan. The texture was unforgettable and together with the broth, it was a delectable experience. Peter and I knew Singaporeans would love it. When we got back to Sg, the first thing we did was to experiment with the recipe.

We thought it was as easy as sprinkling mochi powder over but we were so wrong. Mochi and noodles want opposite things. Mochi absorbs water while noodle dough requires hydration to be stretchy. Mochi becomes chalky and the noodles become brittle after cooling. It was a roller coaster of emotions, but…we did it eventually.

Our last batch of noodles sold out very quickly. So to those who managed to snag it, congrats!! 👍🏻

Did a limited edition drop for Mala Collagen Soup in Sep 2021 as we weren’t sure what the response would be like. Plus, we already had 2 spicy soup flavors. In 2021, there was a wave for Mala soup so this flavor sold out very quickly. And that gave us the confidence for Mala Collagen Soup to be a mainstay.

This wasn’t your typical Sichuan-style mala. We were inspired by the Harbin interpretation. It was richer, with sesame paste and milk, creating this creamy, nutty heat rather than a sharp burn.

Did a limited edition drop for Mala Collagen Soup in Sep 2021 as we weren’t sure what the response would be like. Plus, we already had 2 spicy soup flavors. It was sold out! And that gave us the confidence to officially launch our Mala collagen flavor.
