We have an elderly customer visit us almost every day, walking slowly with his shopping cart as support. He always requested for less noodles as he can't finish. After a while, we thought that he might benefit from a bit more protein and so we gave him a sunny side up every time he buys from us. Some regular customers saw it and requested for it, and then it got caught on for more customers. It has became a listed menu item since 2025.

We are probably the first to offer sunny side up as an add-on for a Hokkien mee store. We were reluctant at first as it was not easy. We are a small store and we only have 2 big woks for our cooking and nothing else. Early attempts frequently resulted in burns on the hand from the sputtering oil, and broken egg yolks. We are better at it now!

We have recently switched to this type of prawn. Although costlier, these prawns are big and fresh, taste great and have good mouthfeel. We want to be better every day!
