Sibratsgfäller Bergkäse is made in the Alpine mountains of Bregenzerwald in Vorarlberg, Austria, the milk comes from Brown Swiss herds grazing on wild grass and herbs.

Like the Comté, Sibratsgfäller has the unmistakable signature nutty flavour with a lovely twist of broth and lemon.

Beautiful craggily texture, just like the walls of the caves itself.

As the ancient makers of cheddar once did, the makers of September's Cheese of the Month ripens their cheeses in Gough’s Cave, just up the gorge from the dairy. The climate in the cave is perfect for cheese maturing: constant eleven-celsius temperature and high humidity, regardless of the season. The environment and natural minerals in the cave gives the cheeses their unique flavour and texture.

Gough’s Cave Aged Cheddar has a beautiful craggily texture, just like the walls of the caves itself. Aged for around 14 months, it is satisfyingly sharp with savoury and mineral notes. This is a classic traditional clothbound cheddar at its best!

We are teaming up with Distillius, a Singapore-based craft distillery turning local flavour into small-batch spirits, botanical liqueurs, and artisanal syrups, with ingredients such as pandan, galangal, torch flower, calamansi and white pepper.
