I was randomly browsing Google reviews for Hwa Heng and came across this comment.

I completely agree that our Brisket Beef Noodle is a unique dish that is not easy to find elsewhere in Singapore.

Unfortunately, not every Hwa Heng outlet carries this item because of the high ingredient cost and the intensive preparation required. The brisket is specially prepared to satisfy true beef lovers who appreciate rich flavour and a melt in the mouth texture.

We prepare fewer than 20 bowls a day, and it is often sold out. The challenge lies in selecting the right balance of lean meat and fat, then cooking it according to our strict SOP to achieve the perfect tenderness.

When done right, the brisket becomes incredibly soft and flavourful, melting in your mouth with every bite. It is one of those dishes that makes every step of the preparation worthwhile.
