Truly respect Eddy — someone I regard as selfless and always ready to lend a helping hand to others. He is someone who exhibits leadership qualities and is exacting upon himself, holds himself to high standards in all that he does. This is most obvious in how sparkling clean every single stainless steel surface is at his stall. With unwavering discipline, he cleans up his stove and workstation right down to the corners, with a squeegee and cloths in gloved hands, every single day after the stall ends lunch service. Upright, honest and forthright, this guy is really a hero of our time. And yes, his duck confit and mash is worth eating. Restaurant quality fare in a hawker centre.
