We prefer using gas stoves with strong flames because it helps us stick to traditional cooking methods. For certain dishes, especially in stir-frying or making soups, the direct, intense heat brings out the "fire taste" or “wok hei,” which gives the food a unique flavor and texture. Plus, the strong flame keeps the soup piping hot and allows for quick cooking, which is essential for getting the perfect result. I feel like electric stoves just don’t offer the same level of control or intensity needed to achieve that.
