Learning how to make the fish soup we are known for was one of the biggest challenges i had. Why?

Because there wasn’t a written recipe that was handed down. Also, there were changes that needed to be made to the recipe and the only way was learning how to make the soup.

So i learnt from scratch without being taught by my chefs while we still had our restaurant. It took almost 1 year of experimenting.

Part of the change was switching from using pork bones to chicken bones. Next was nailing down the proportions of bones and also the amount of ginger and pepper used.

But other than that, it was also learning all the basics at the same time.

So far it’s still a small little home business that keeps the brand going. There has been some opportunities here and there but i felt that they weren’t “right”.

But hopefully, there’s something in the pipelines in a couple months that i can share. Fingers crossed!!

Anyway, prep work is always important in f&b and with the current biz model selling frozen soups, prep work is almost everything and the labels doesn’t get pasted onto the packaging by its own!

Rainy days are perfect for soup. Fish soup to be exact!

Making the next batch and it’ll be available for self-collection from tomorrow onwards with delivery slots on Saturday & Sunday.
