Our lease at 116 Changi Road will come to an end on 18 May 2026, and Sandwich Saigon will be taking a short break while we search for a new location.

Pea Shoots with Shiitake Mushrooms Recipe

Ingredients:
- 12 small shiitake mushrooms (soaked until soft, stems removed, about 4 cm diameter, thick flesh)
- 3 slices ginger
- 200 g pea shoots (1 box)

Seasoning A:
- 1/2 teaspoon salt
- 2 tablespoons stock

Seasoning B:
- 2 tablespoons oil
- 1 bowl stock
- 1 1/2 tablespoons thick soy sauce (or oyster sauce)
- 1/2 tablespoon sugar
- A little pepper
- 1 teaspoon cornstarch slurry
- 1 teaspoon sesame oil

Method:

Step 1:
Heat the wok and add 1 tablespoon oil. Add the pea shoots and seasoning A. Stir-fry quickly over high heat until evenly mixed. Remove and place on a serving plate.

Step 2:
Heat the wok and add oil. Add ginger slices and shiitake mushrooms and stir-fry until fragrant. Add seasoning B, cover, and simmer on low heat for about 5 minutes until the sauce slightly reduces. Add the cornstarch slurry to thicken. Drizzle with sesame oil. Place the mushrooms on top of the pea shoots and serve.

Cooking Tips:

1. For better presentation when serving guests, remove the ginger slices after frying for fragrance before plating.
2. The tender shoots of the pea plant are called pea shoots. They are sweet and tender. Many are now grown in sterile environments without pesticides and can be stir-fried or eaten raw.

Braised Tofu with Tomato

Ingredients
• 300 g tofu (medium-firm), cut into cubes
• 2 tomatoes, diced
• ½ cup green peas
• 1 tbsp cooking oil
• 1 tsp soy sauce
• ½ tsp salt
• 1 tsp sugar
• 1 tsp sesame oil
• 1 tbsp cornstarch
• 3 tbsp water

Instructions
1. Heat oil in a pan over medium heat.
2. Add diced tomatoes and stir-fry until they soften and release juice.
3. Add tofu cubes and gently toss to coat with the tomato sauce.
4. Season with soy sauce, salt, and sugar. Stir gently to avoid breaking the tofu.
5. Add green peas and a small amount of water. Simmer for 2–3 minutes.
6. Mix cornstarch with water, pour into the pan, and stir gently until the sauce thickens.
7. Drizzle with sesame oil, turn off the heat, and serve hot.

HOMEMADE FRESH MUSHROOM CHOWDER 🍲
There’s nothing more comforting than a warm, creamy bowl of mushroom soup! Today, I’m sharing a special recipe that uses potatoes instead of flour to create a naturally thick and velvety texture. It’s healthy, delicious, and super easy to make! ✨
🛒 INGREDIENTS:
• Fresh Shiitake Mushrooms (for that earthy aroma)
• Potatoes (the secret to a smooth, thick base)
• Fresh Milk & Evaporated Milk (for ultimate creaminess)
• Dried Herbs (parsley or thyme)
👩‍🍳 DIRECTIONS:
1️⃣ Prep: Clean and finely chop the fresh mushrooms. Peel and dice the potatoes, then blend them into a smooth puree.
2️⃣ Cook: Pour the potato puree into a pot with a bit of water and bring to a boil.
3️⃣ Simmer: Add the chopped mushrooms, milk, herbs, and a splash of evaporated milk.
4️⃣ Finish: Stir constantly (to prevent burning!) until it boils again. Turn off the heat and let it sit for a minute before serving.
