Five Spice at Jewel Changi Airport is a dynamic market dining concept that highlights the local flavor of Southeast Asia. Inspired by the diversity of local hawkers market, individual food stalls have been designed to celebrate regional cuisine types. The atmosphere of the market is fresh and vibrant. Light timber creates the contemporary interpretations of traditional food stalls and specialty dining houses. A mixture of brick and Peranakan tile and rich color will be layered into the dynamic space, while modern art and murals are used to tell a story of Singapore heritage in a contemporary way. Interior planting and vertical gardens will further enhance the nature of the indoor courtyard. Five Spice will celebrate the unique and diverse character of regional cuisine as well as creating a lively engaging atmosphere that can truly be enjoyed by our visitors and locals alike.

Five Spice will feature local brands such as Fu Lin Fried Yong Tofu, Xi De Li Fried Dough Fritters, Huat Huat BBQ Chicken Wing, Guan Chee HK Roast, Kim Keat Palm Market Li Xin Chao Zhou Fishball Noodles and Faai Di by Ka-Soh have more than 25 years of culinary heritage and awards. Chen’s Mapo Tofu, a sister concept by Michelin-starred Shinsen Hanten by Chen Kentaro 四川饭店 at Mandarin Orchard Singapore, will also be part of Five Spice.

There is also an on-going collaboration with Anthony The Spice Maker, a well-known local spice epicurean with 33 years of spice blending experience. Crafting authentic, Traditional Flavours of Singapore since 1986. Anthony takes pride in delivering authentic local flavours through easy-to-use premixes. His blends are well-loved by the locals, as well as home cooks from all over the world, from all walks of life and of different race and religion.
