Hi everyone!

It's been 3 years since Penang Chiak Ho Liao called it quits.
Since then, what a journey it has been. We've never forgotten our days as a hawker and we are very thankful for the learning experience, meeting all our customers, hawker neighbours and dishing out authentic Penang food to all of you. We would have not been able to do this without all of you, so we made a video, in part to honour and thank each and every one of you!
Thank you thank you thank you!
We also want to salute all hawkers out there in Singapore and Malaysia because we know 1st hand how tough it is to make a living out there, especially in these volatile times. You guys are the true heroes and pillars of both countries, feeding the nation delicious food.

We are Fran & John, a Singaporean early retired couple in our early 40s, enjoying the financially free life.We opened a hawker stall with no F&B experience!!...

East meets West - Miso Omelette

Hi guys! I was wondering what to cook for breakfast this morning & I thought how about if I mix my ingredients from different countries into an omelette. So here I present to you my miso omelette with various ingredients, from different countries.

Ingredients:
3 eggs
Diced yellow onions
White pepper
Malaysian red chilli
Japanese shichimi togarashi red pepper mix
Red chilli powder
Japanese white miso paste
A dollop of French butter
Grated Italian Parmesan cheese

Directions:

1) Crack your eggs into a bowl. Add 2 tsp miso paste and mix well. Beat the eggs and paste until foamy. Add the white pepper, japanese shichimi, red chilli powder and mix well.

2) Dice the yellow onions and red chilli (to your desired amount). I personally like my omelette with lots of yellow onions and a mild spiciness in each bite. Mix the onions and chilli into your egg mixture.

3) Heat up your frying pan to medium heat and add the french butter. Once the butter is melted, add in the egg mixture into the pan and allow it to cook for 1-2 minutes until you see the sides getting firm.

4) Grate the Parmesan cheese onto the omelette (desired amount). Once you see the sides of the omelette turning a slight golden brown, flip one side over and cook it evenly on both sides, to your desired doneness.

5) Serve with warm crusted bread and salad on the side for that complete meal. Each bite of the omelette will be buttery, with the crunchiness of the onions, a hint of spiciness from the chilli and a burst of umami flavour from the miso, finished off with some cheesy goodness. I like to add some baked almonds to my meal for that earthy nutty flavour.
Enjoy!

Corn Fritters!

I made a batch of corn fritters and it was soooo good!
Let me show u how it is done. It is an easy 4 ingredient recipe.

Ingredients:
1/2 cup self-raising flour (8-9 tbsp)
2 eggs
1-2 stalks corn on cob, remove the stalk (you can use frozen corn as well)
1 small cup of sliced spring onions or chives
oil for frying

Directions:
1) Place the flour, eggs, half the corn kernels and 1 tsp salt into a blender (I use a Thermomix). Blend until smooth consistency. Transfer the mixture into a bowl and mix in the balance corn kernels and spring onion /chives. Mix well.

2) Heat up the oil in a frying pan over medium high fire. Scoop out the batter using a spoon and make fritters by spreading the batter out with the back of the spoon. Let it cook on each side for about 2 minutes or until golden brown. Cook the rest of the batter.

3) I like to make my own sauces, so for this corn fritters I made a sauce of out japanese mayo, garlic chilli sauce, sprinkle of black pepper and a squeeze of lemon juice. The sauce is tangy, slightly spicy and creamy. A perfect accompaniment to the corn fritters. You can make this for breakfast, just add some protein like scrambled eggs or sausages for that perfect brunch; or you can make them for your tea time. It is light enough to be a snack. Enjoy!
