in this household, carrot cake comes in black, white, or even both! 🥕⚫⚪

here’s how to make the hawker favourite right from your own home

ingredients:
350g steamed carrot cake
4 tbsp pork lard
3 tbsp minced garlic
2 tbsp chye poh (wash to get rid of excess salt)
2 eggs
1 tsp fish sauce
1.5 tbsp kecap manis, for black version (adjust amount to taste)
chopped spring onions

in a pan over medium heat, add pork lard, garlic, chye poh and stir fry until fragrant.
add steamed carrot cake, stir fry for a bit.
season with fish sauce, mix well. add eggs and leave to cook until bottom is nicely browned.
cut carrot cake into 4 sections flip them over and char the other side.
remove 2 pieces to serve as white carrot cake.
stir fry rest of carrot cake in pan, add kicap manis. mix evenly and serve as black carrot cake.
garnish both with spring onion.

but if you want a quick airfryer sambal stingray hack, here’s all you need:

300g Stingray (or any fish you like)
Salt, to taste
5 tbsp Sambal belacan (enough to cover fish)

Pickled onions:
5 Shallots, sliced
Juice of 7 calamansi
Salt, to taste

just wrap up your stingray parcel (like a baby), and pop it into the airfryer for 15-17mins at 200℃ or until cooked

top with pickled onions and serve with some cincalok (fermented shrimp) on the side, and some rice

make these traditional teochew dumplings and impress your ahma👵🏻

to make 12-15 pieces , all you need is:
filling
250g of turnips
75g of carrots
50g of dried mushrooms, rehydrated
40g of dried black fungus, rehydrated
30g of dried shrimps, rehydrate
20g of garlic
(optional) 130g sio bak
white pepper, to taste
30g sugar
25g light soy sauce
salt, to taste
(optional) fish powder, or chicken powder
½ tbsp oyster sauce

dough
140g of rice flour
80g of tapioca starch
salt
white pepper, to taste
2 tbsp shallot oil, for flavour
300ml boiling water, as needed

here's what you need:
3 pieces boneless chicken thigh (cut into bite sized pieces)
½ tsp salt & pepper
1 tsp garlic powder
1 egg white
2 tbsp cooking cream
2 tbsp cornstarch
8 tbsp potato starch
1 tsp baking soda
1 tsp salt
2 tbsp roasted white sesame

sauce
1 tbsp cooking oil
½ cup rice syrup
1 tbsp marmite
1 tsp oyster sauce
½ tsp light soy sauce
3 tbsp cooking wine
1 tsp raw sugar

15g Butter
20g Garlic, finely chopped
100g Prawns
35g Tom yum paste
10g Coriander
10g Red chilli
4g Kaffir lime leaf
15g Lemongrass
50ml Coconut milk
30ml Cream
30g Shiitake Mushrooms, sliced
150g Spaghetti, cooked
