Banana coffee is having a moment! From banana milk coffee to banana lattes, this unexpected pairing has been popping up everywhere. 🍌☕ And the best part? You can easily make it at home too.

No coffee machine? No worries.
No fancy equipment? Not needed. 🙌

Here’s a simple way to try it with Gold Beverage Nanyang Coffee Sachets:

☕ Brew 1 sachet in 200–250ml of boiling hot water (use less water if you'd like to make iced coffee). Steep for 5 minutes, then remove the sachet.

🍌 Take 1 ripe banana and puree or mash it until smooth.

🥄 Add the banana puree to your coffee, a little at a time, until you get the banana flavour you like.

🥛 Want it creamier? Add milk or your favourite milk alternative to taste.

☕ Meet Robusta: The Coffee Bean That Packs a Punch

Think you know your coffee? Let’s talk about ROBUSTA— one of the two main coffee species you’ll find in your cup.

🌱 Where did it come from?
Robusta (*Coffea canephora*) is native to tropical Africa, particularly regions around Uganda and the Democratic Republic of the Congo. It was later cultivated commercially in other parts of the world.

🕰️ A little history
Although coffee has been cultivated for centuries, Robusta became commercially important much later than Arabica — particularly from the **late 19th century**, as coffee growers looked for plants that were more resistant to diseases such as coffee leaf rust.

💪 Why “Robusta”?
The name says it all! Robusta plants are:

* More resistant to pests and diseases 🐛
* Better suited to hotter, lower-altitude conditions 🌡️
* Generally easier to grow and produce higher yields 🌿

⚡ And yes… it has more caffeine!
Robusta beans typically contain around twice the caffeine of Arabica*

* Arabica: ~1–1.5% caffeine
* Robusta: ~1.7–2.7% caffeine

That higher caffeine content isn't just for our morning kick — caffeine is also a natural defence mechanism that helps protect the plant from insects. 🐜

☕ So what does Robusta taste like?
Expect a stronger body, deeper bitterness and more intense coffee character — which is why Robusta has long played an important role in blends, including traditional Nanyang coffee.

Whether you’re team "black coffee only" or can’t survive without your morning latte, there is one variable that dictates your entire extraction: YOUR GRIND SIZE! ☕💡

If your coffee has been tasting a bit hollow, bitter, or watery lately, it’s likely time to adjust your grinder. Here is how to dial in your beans based on how you drink your coffee, the physics of the bean itself, and your choice of milk. 🥛✨

1. Black vs Milk-Based: The Golden Rule
The way you intend to drink your coffee dictates your target extraction. 🎯

For Black Coffee (Filter, Pour-over, Long Black): You want clarity of flavour. If you grind too fine, you will over-extract, pulling out heavy, bitter compounds that mask the delicate floral or fruity notes. Aim for a medium to medium-coarse grind. ☕🌱

For Milk-Based Coffee (Latte, Cappuccino, Flat White): Milk is heavy, sweet, and fat-dense. To cut through it, you need a highly concentrated, intensely flavoured espresso. Aim for a fine grind. This slows down the water flow, creating enough pressure to extract the rich oils, sugars, and roasty notes needed to stand up to milk. 🥛💪

2. The Hidden Variable: Bean Porosity & Altitude
You can’t just set your grinder and forget it, because not all coffee beans are structurally the same. The secret lies in porosity—how easily water can pe*****te the bean. 🏔️🔬

High Altitude (Dense & Less Porous): Beans grown at high altitudes (above 1,500 metres, like many Ethiopian or Colombian coffees) grow slowly. This creates a highly dense, tightly packed cell structure. Water has a harder time getting inside, so you need to grind slightly finer to help unlock those flavours. 🧗‍♂️🌋

Low Altitude (Soft & Highly Porous): Beans grown at lower altitudes grow faster and are much more porous, resembling an open sponge. Water pe*****tes them incredibly fast, meaning they extract very quickly. 🧽🌊

Other Bean Factors to Watch:
Roast Level: Dark roasts have spent more time in the roaster, making them brittle, highly porous, and quick to extract. Light roasts are dense and tough. 🔥🍂

Freshness: As coffee ages, it loses carbon dioxide. If your beans are a few weeks old, you may need to fine up your grind to maintain the same extraction time and crema. ⏳📅

3. The Tug-of-War: Porosity vs Milk
Here is where coffee brewing gets interesting! Whilst porous beans (low altitude or dark roasts) extract quickly and usually require a coarser grind for black coffee to avoid bitterness, everything changes when milk is involved. 🤼‍♂️🥛

If you are pairing a highly porous bean with milk, your main enemy is a watery shot. Because porous beans are brittle, grinding them too coarsely allows the water to rush through the espresso puck too fast (the gushing effect). This yields a weak espresso that instantly gets drowned out by milk. 😰🌊

The Fix: If you are pairing porous beans with milk, you actually need to grind finer! Compacting the grind slows down the shot and forces a heavy, high-intensity extraction. Whiilst this might taste too intense or bitter as a straight black espresso, that extra punch is exactly what you need to cut through the heavy texture and fats of the milk. 🛠️☕

4. The Milk Substitute Twist: Plant-Based Variables
If you are swapping cow’s milk for a plant-based alternative, you might need to head back to the grinder yet again. Oat, almond, and soy milks have different protein and fat structures than dairy: 🌾🥥

Oat Milk: Oat milk is naturally sweet and quite thick. Because it has a strong flavour profile, it can easily drown out a delicate espresso. If your latte tastes flat, grind a fraction finer to give your espresso a bit more body to stand up to the oat. 🌾☕

Almond Milk: Almond milk is thinner and much more prone to curdling if the coffee is too acidic. If you are using a light, high-altitude bean, a standard extraction might taste too sour and split the milk. To fix this, grind slightly finer to increase extraction, reduce the perceived acidity, and create a smoother blend. 🥜💔

The Barista's Cheat Sheet:

Drinking it black? Let the bean's porosity dictate the grind (porous = coarser to avoid bitterness). 🖤

Adding dairy or plant milk? The milk dictates the grind (grind finer to build up enough strength to survive the milk). 🤍
