𝐓𝐢𝐩 𝐨𝐟 𝐭𝐡𝐞 𝐃𝐚𝐲

When you're cooking any veggies that leave water, always cook them on high and then bring it towards the sides of the pan. The water will collect in the middle and dry up fast 👌
Another tip is to add salt towards the end or else more water will be released.

This way the veggies won't over cook and will maintain a crunch 😋

Some people don't like biting into cardamom while eating pulao or chole. My daughter hates it 😳

Here is a great hack. Pin 3-4pc of cardamom on a tooth pick and throw in along with the pulao while cooking. Later remove it and enjoy without the fear of biting into it.

𝐓𝐢𝐩 𝐨𝐟 𝐭𝐡𝐞 𝐃𝐚𝐲

When making Sabudana tikkis, I try to follow these tips to make them crisp.

Firstly, wash really well and soak the Sabudana overnight. Do not put too much water.

Secondly. always mix all masalas etc in the aloo before you mix the Sabudana. Don't mix it all together. When the aloo mixture is absolutely ready then with a light hand mix in the Sabudana. Don't knead it. They will stand out and not fully dissolve inside.

The temperature of the oil needs to be well managed. It should be medium hot while frying or else they will not cook well. Not too cool at the same time or else they will soak a lot of oil. It's very tricky as you can see 😕

While cooking tomatoes in any curry, wait for it to cook really well before adding water. The oil should release well and a shine comes. Let the spices cook through and avoid raw flavours. Then add water. Don't rush.
You can make the gravy a day before and keep. That way you won't rush when cooking the actual meal 😋

It's been years since I did a birthday parties for my kids, so I was so excited when my daughter asked me to help out with her Bollywood-themed party 🎥

She called over 25 of her friends and asked me to make some of my best-seller dishes 🤩 some of my daughter’s friends also brought delicious dishes shown in iconic Bollywood movies 🎬

She prepared lots of games and prizes, and it was wonderful seeing everyone dressed in their Bollywood best 💃🏻

We had lots of fun trying new and interesting ways to serve the food. We used paper boats, small bowls, and tiered platters to make it more visually appealing 😋 We tried to be eco-friendly and used paper and bamboo items rather than acrylic and plastic 🍽

Here were the dishes we served:
*Dhokla from 3 idiots
*Bread Pakoda from Band Baaja Baarat
*Papdi Chaat from Sharmaji Namkeen
*Dahi Bhallas from Khatta Meetha
*Assorted Lucknowi Kebabs from Dawaat-E-Ishq
*Paneer Wraps from Break Ke Baad

Had so much fun preparing for the party and so glad it turned out well! 😊
