A fragrant prawn curry using Sri Lankan spices and elevated with fresh lovi fruit vs usual Goraka or tamarind for natural tartness and acidity — I was inspired by spotting ripe lovi on a stroll and instantly knew that they’d be a perfect match.

Inspired by Tofu challenge. I decided to open up my fridge and whip up this cold tofu dish.

Not sure what to call it though!

Ingredients
Half a Japanese carrot diced
Leftover leak stalk diced finely
2 tbsp soy sauce
1 tsp of cocnut palm sugar
1.5tsp of chilli oil
A small(ish) block of Silken Tofu

Mix the all the ingredients together except the tofu. Remove tofu from packet, drain water and lightly pat dry with kitchen towel taking care not to smash. Pour the mixture over and garnish with sliced ginger and sprinkle with roasted sesame seeds (gomashio)
