In 1994, a 25-year-old was called home to a brewery without a tōji; the master brewer. Nonetheless, he assumed the role.
Tatsugoro Takagi XV did not inherit a style. He invented one.
While Japan was drinking light and dry, he brewed aromatic, mellow, umami-rich sake — and named it Juyondai, Fourteenth Generation, for his father.
He still refuses the title of tōji.
“I’m still on my way.”
That humility is why the bottle in your glass still tastes like a point in time, not a formula.
