BeeLand Honey Vinegar Lime Jelly Mooncake
A refreshing twist on the traditional mooncake
light, fruity, tangy and perfect for Mid-Autumn Festival!
Ingredients
β’ 100ml BeeLand Honey Vinegar Lime
β’ 60ml water
β’ 3g agar-agar powder
β’ Jelly powder, as needed
β’ Canned fruit cubes, such as longan or pineapple
β’ Fresh dragon fruit, optional
β’ 1β2 pandan leaves
Method
1. Make the pandan water
Add 60ml water and pandan leaves to a pot. Bring to a boil and simmer briefly to release the pandan aroma. Remove the pandan leaves.
2. Add the jelly powder & agar-agar powder
Add the jelly powder and 3g agar-agar powder. Stir continuously over low heat until completely dissolved.
3. Add BeeLand Honey Vinegar Lime
Turn off the heat and allow the mixture to cool slightly. Add 100ml BeeLand Honey Vinegar Lime and stir well.
4. Create the mooncake base
Pour a small amount of the jelly mixture into the mooncake mould. Refrigerate for 5β10 minutes, or until slightly set.
5. Add the fruit filling
Add the canned fruit cubes and fresh dragon fruit. Pour in the remaining jelly mixture until the mould is 80β90% full.
6. Chill until set
Refrigerate for 3β4 hours, or until completely set.
7. Unmould & enjoy!
Carefully remove from the mould and enjoy your refreshing Lime Jelly Mooncake! πβ¨
