The Kitchen Alchemist story time :

A quick high hydration dough .
Zelfde deeg van gister , alleen eèn vructen topping en gezoet met cinnamon sugar.

Let wel dat deeg heeft alleen wat vanille suiker voor de smaak en suiker voor mijn gist.

De stukjes vruchten in combinatie met cinnamon sugar en rozijnen doen de rest.
Afmaken met wat icing streaks.

72 % hydratatie dwz voldoende vocht die zorgt voor een heel plakkerig deeg.
Er zijn broden die gemaakt worden met gelijke delen blom en water . De hoeveelheid water is gelijk aan blom ( high hydration dough). Geduld en je krijgt wel het gewenste resultaat. Soms is men 2 dagen bezig met het vouwen van hun deeg. Er ontwikkelen zich meer glutten en krijgt je deeg meer structuur. Dat deeg is dan niet ( meer zo) plakkerig.
Er is zoveel te vertellen over dit deeg soort en wat je er allemaal mee kan doen.

80% hydration

The yummiest bread ever made .
Garlic confit paste , basil oil and cheese . Topped with seasalt
The texture is amazing.

If you don't have any patience , this bread is not for you.
This dough is super sticky and requires folding and resting.

Due to the constant requests and repeated questions regarding orders , i have decided to bake once during the week and on the weekends.

Please keep in mind that due to my busy work schedule , this is an exception😊 to help those who are interested in my goodies.
