🌲Wild-to-table, Farm-to-table🌲
Believe it or not, Ratchaburi has an abundance of wild mushrooms hidden in its forests. 🌿🍄♥️

While foraging around our farm recently, I discovered fresh Skull-shaped Puffballs (Calvatia craniiformis) growing right beside our Pangola grass field.

We also have plenty of horse purslane (Trianthema portulacastrum), a wild edible vegetable and traditional medicinal herb that I have intentionally spread throughout the farm. It is highly valued in traditional medicine and is known for its rich nutritional profile, including minerals such as iron, calcium, and potassium. The tender leaves are also delicious as a green vegetable.

Today's harvest became a simple farm-to-table meal. I stir-fried the fresh puffball mushrooms with horse purslane and garlic.

The earthy flavor of the wild mushrooms paired beautifully with the tender greens and aromatic garlic. Fresh, seasonal, and harvested just steps from our home.

Absolutely delicious—a reminder that some of the best ingredients are often growing right around us when we learn to recognize and appreciate them. 🌱🍄

เชื่อหรือไม่ว่า จังหวัดราชบุรีมีเห็ดป่ามากมายซ่อนตัวอยู่ตามผืนป่า 🌿🍄♥️

ระหว่างที่เดินสำรวจรอบฟาร์มเมื่อไม่นานมานี้ ผมพบเห็ดหัวกะโหลก (Skull-shaped Puffball หรือ Calvatia craniiformis) สด ๆ ขึ้นอยู่ข้างแปลงหญ้าแพงโกล่าของเรา

ภายในฟาร์มแปลงผักยังมีผักเบี้ยหิน (Trianthema portulacastrum) หรือที่หลายคนรู้จักในฐานะผักพื้นบ้านและสมุนไพรที่มีคุณค่า ซึ่งฉันกระจายพันธุ์ไว้ตามพื้นที่ต่าง ๆ ของฟาร์ม ผักชนิดนี้ได้รับการใช้ประโยชน์ในภูมิปัญญาดั้งเดิมมาอย่างยาวนาน และมีแร่ธาตุสำคัญหลายชนิด เช่น ธาตุเหล็ก แคลเซียม และโพแทสเซียม อีกทั้งยอดอ่อนยังนำมาปรุงอาหารได้อร่อยอีกด้วย

ผลผลิตที่ได้ในวันนี้จึงกลายเป็นเมนูง่าย ๆ จากป่าและฟาร์มสู่โต๊ะอาหาร ฉันนำเห็ดหัวกะโหลกสดมาผัดกับผักเบี้ยหินและกระเทียม

รสชาติของเห็ดป่าที่หอมเป็นเอกลักษณ์เข้ากันได้อย่างลงตัวกับความนุ่มของผักและกลิ่นหอมของกระเทียม ทุกอย่างสดใหม่ ตามฤดูกาล และเก็บเกี่ยวได้ที่ฟาร์มเรา

อร่อยอย่างยิ่ง และเป็นอีกครั้งที่เตือนให้เห็นว่า อาหารชั้นดีไม่จำเป็นต้องมาจากที่ไกลเสมอไป เพียงเรารู้จักสังเกต รู้จักปลูก และเห็นคุณค่าในสิ่งที่อยู่รอบตัว 🌱🍄

💚Farm-to-table 💚
Mango season may be coming to an end, but we are still enjoying a few more mangoes from our farm. 🥭😍

This variety is called R2E2, a mango originally developed in Australia, known for its beautiful colour, sweet flavour, and juicy flesh.

I love creating simple whole-food meals from what is available in the garden and farm. This time, I made a new breakfast dish by combining kidney beans with fresh mango.

The creamy texture of the beans pairs surprisingly well with the natural sweetness and aroma of the mango. Simple, nourishing, and made entirely from real food.

We absolutely love this combination — another reminder that some of the best meals come from seasonal harvests and a little creativity in the kitchen and family. 🌿

💚ฟาร์ม-ทู-เทเบิล💚
ฤดูกาลมะม่วงกำลังจะผ่านไป แต่เรายังมีมะม่วงจากฟาร์มให้เก็บกินได้อีกเล็กน้อย 🥭😍

มะม่วงพันธุ์นี้ชื่อว่า “R2E2” มีต้นกำเนิดจากประเทศออสเตรเลีย เป็นมะม่วงที่มีสีสวย เนื้อแน่น ฉ่ำ และมีรสหวานหอมเป็นเอกลักษณ์

ฉันชอบสร้างสรรค์เมนูง่าย ๆ จากวัตถุดิบที่มีอยู่ในสวนและฟาร์ม ครั้งนี้จึงลองนำถั่วแดงมาต้มรับประทานคู่กับมะม่วงสด กลายเป็นเมนูอาหารเช้าแบบใหม่ที่ทั้งเรียบง่ายและเปี่ยมด้วยคุณค่าทางอาหาร

ความมันนุ่มของถั่วแดงเข้ากันได้อย่างลงตัวกับความหวานหอมตามธรรมชาติของมะม่วง เป็นอาหารจากธรรมชาติที่ไม่ต้องปรุงแต่งอะไรมาก แต่กลับอร่อยเกินคาด

เราชอบเมนูนี้มาก และมันย้ำเตือนอีกครั้งว่า อาหารที่ดีที่สุดมักมาจากผลผลิตตามฤดูกาลและความสร้างสรรค์เล็ก ๆ ในครัวและครอบครัว 🌿

Made with tender young leaves, mushrooms, chickpeas, and our homemade farm tomato sauce, this wholesome dish celebrates seasonal ingredients grown close to home.
