🌽 Miso Cream Corn Soup(Vegan)
We finally came up with a healthy corn soup recipe. At every BKK Farmers’ Market, customers always request corn soup but our major concern has always been how to offer a healthy and delicious Corn Soup? One that doesn’t contain butter or cream?
We have experimented many ingredients to cook our organic corn with but this one is the winner!🥇
We chose vegan Maru-yu miso, sesame oil, and white sesame seeds. Miso contains many healthy vitamins and minerals like vitamin K, manganese, zinc, protein and calcium. Many of these nutrients support essential structures like the bones and nervous system. Improves digestion: Because miso is high in probiotics, it helps the body maintain healthy bacteria levels. As for the taste, miso provides the naturally umami, creamy and deeply layered flavors of savory and sweet. It is the perfect replacement for milk and butter. White miso holds the mildest taste and compliments the deliciousness of the fresh organic corn rather than overpowering it.
Corn is rich in vitamin C, an antioxidant that helps protect your cells from damage and wards off diseases like cancer and heart disease. Yellow corn is a good source of the carotenoids lutein and zeaxanthin, which are good for eye health and help prevent the lens damage that leads to cataracts.
The corn kernels and soup are blended till smooth and strained through fine mesh sieve. As a result, the soup has no fibers and the texture is silky smooth and creamy with a somewhat thick consistency. Give our tasty Miso Cream Corn soup a try💛
