Within the ramen course, there will be another exceptional ingredient: Iki Wagyu—one of Japan’s rarest and most limited wagyu. It will be presented as an cold appetizer, marking the very first time it is available to experience in Thailand.
Iki Island, long known as the “Island of the Gods,” is a remote island steeped in history and spirituality, home to over 150 shrines. In this rich natural environment, Iki beef is raised—an extremely rare wagyu, with only a few hundred head shipped each year. Influenced by sea breezes and mineral-rich soil, it is known for its fine texture and delicately sweet fat that melts effortlessly in the mouth. Rather than bold richness, it is prized for the depth and purity of its umami—a true “phantom wagyu” known only to those in the know.
CRYSTAL STEAK is a new expression of wagyu, created through a unique technique: the beef is fully cooked, then chilled to crystallize its umami. Unlike low-temperature cooking, this method achieves a well-done finish while preserving remarkable tenderness and a silky texture.
