people keep asking why it smells like that. answer: we just refuse to cheap out on ingredients.
🔧 prep
preheat the oven to 180°C for 10 min — non-negotiable, a cold oven kills the rise
butter the mold in a golden-ratio spiral: 5 turns clockwise, then 8 counter-clockwise. sounds unhinged, but it coats every corner evenly — that's how you get the release AND the crust spiral🐚
🧈 premium NZ butter - 78 g.
🥛 grass-fed milk - 200 ml.
🍯 Sweety condensed milk(55 g.)+ real palm sugar(95 g.)
🧂 pink himalayan salt (5 g.)
🌾 dango-grade glutinous rice flour (128 g.)+ boba-grade tapioca starch (63 g.)= the chew
🥚 1 S-Pure eggs
🌿 real madagascar vanilla extract (1/2 tbsp.)
🔥 3-stage bake
200°C / 10 min — build the base
180°C / 15 min — cook it through
160°C top heat + fan / 1 min — lock in that crispy shine
crispy outside, chewy inside, gone in 60 seconds 💀
