Chateau Guiraud 1996 Impérial with Brittany Langoustine💛🤍

The idea was simple: work closely with Davide and Sabino and showcase just how versatile Sauternes can be and explore all the possibilities around it while keeping dessert out of the equation.

And this pairing worked perfectly.

Brittany langoustine, zucchini, fresh almond, ajo blanco and nasturtium flower. The natural sweetness of the langoustine connected beautifully with the w**e, while the freshness, salinity and almond brought another dimension to this beautifully evolved 1996.
This is exactly what we love about Sauternes. There is so much more to explore beyond the classic pairings, and being creative with it can lead to some seriously exciting combinations.

We are very proud to welcome Bodega Chacra to The W**e Merchant family as its new official and exclusive importer in Thailand.
Founded by Piero Incisa della Rocchetta, grandson of Mario Incisa della Rocchetta, the creator of Sassicaia, Chacra was born from a completely different adventure. Piero travelled to Río Negro in Patagonia in search of great Pinot Noir and discovered remarkable old, ungrafted vineyards, including vines planted in 1932 and 1955.
Today, Chacra has become one of the great names of Patagonia. The w**es are farmed organically and according to biodynamic principles, with a philosophy centred on purity, freshness and allowing this very particular terroir to speak.

🍇 The reds, Pinot Noir is at the heart of the estate from Barda and Lunita to Cincuenta y Cinco and the flagship Treinta y Dos, produced from that historic 1932 vineyard. Alongside them comes Roka, Chacra’s interpretation of Patagonia Malbec.

🥂 And then there is Chardonnay, and not any Chardonnay. Piero partnered with one of Burgundy’s most respected Chardonnay producers, Jean-Marc Roulot of Domaine Roulot in Meursault. Roulot joined the project in Patagonia for the planting, farming and vinification of Chardonnay, resulting in Mainqué and Chacra Chardonnay, a fascinating meeting between Burgundy know-how and Patagonia.
From Pinot Noir and Malbec to Chardonnay, these are not the big, heavy w**es many people still associate with Argentina. They are about energy, elegance, minerality and a real sense of place.

For this edition, “Soirée en Croûte”, Chef Valentin Fouache from « Duet by David Toutain » presents a menu built around iconic French dishes, from Pâté en Croûte and Pithiviers to Lobster Vol-au-Vent and Beef Wellington, paired with an exceptional journey through Burgundy’s most prestigious terroirs.

Hosted by That Fat Kid Buddy and organized by Club Uncorked, this one-night-only supper brings together childhood favourites, elevated comfort food, and a carefully selected w**e lineup curated in collaboration with The W**e Merchant.

Chef Buddy’s playful menu features foie gras khanom buang, lobster toast, hotate kaprao chawanmushi, river prawn sticky rice risotto, bone marrow dirty kaprao ramen, signature crispy beef kaprao fried rice, and a nostalgic dessert inspired by a late-night 7-Eleven visit.
