A beautiful dinner at Blue by Alain Ducasse, 1 Michelin Star ✨🍷

With Xavier Sanchez, all served in magnum, representing Château Suduiraut in Sauternes showcasing its elegant dry side then Château Pichon Baron in Pauillac with three vintages (2014, 2004, 1964), and the beautiful Quinta do Noval in the Douro Valley, spoiling us with a 20-Year-Old Tawny and the rare Nacional 2011.

Petrus Wine Dinner at Chef’s Table Bangkok ⭐️ ⭐️🍷

When perfection no longer needs a definition.

A huge thank you to the whole team at Chef’s Table, to Chef Vincent Thierry, Gary, and Guillaume, for delivering a night that was truly unforgettable. The pairings were simply outstanding, taking us through two beautiful series of Petrus vintages across six remarkable years. We began with 2011, 2014, and 2004, showing a more delicate, refined, and classically balanced side of Petrus, shaped by cooler and wetter conditions. Then came 2015, 2010, and 2005, vintages of greater power, depth, and concentration, revealing a broader, richer, and more monumental expression of the estate.

A night of precision, emotion, and pure excellence. ✨🍷

⭐️⭐️A night to remember with Opus One at Anne-Sophie Pic, Le Normandie ✨🍷

A truly spectacular evening around one of Napa Valley’s most iconic wines.

Chef Tamaki delivered an incredibly precise and creative menu, with each dish designed to highlight the elegance and depth of Opus One through a selection of outstanding vintages.

We started with a beautiful Chiang Mai beetroot dish paired with Opus One 2012, followed by the legendary Berlingots filled with smoked Camembert and mushroom consommé with Opus One 2010. On paper, this pairing almost sounded risky, yet it turned out to be one of the most surprising and impressive matches we have had the chance to experience.✨
Then continued with Aveyron lamb paired with Opus One 2015, before moving to Australian Wagyu beef fillet with Opus One 2019. To finish, a delicate Forêt-Noire paired with Overture 2021 brought the dinner to a beautiful close.

The harmony between cuisine and wine was simply incredible. Many guests told us it was one of the best wine dinners they have experienced at Le Normandie, and honestly, we agree with them. 🍷

What made the evening even more impressive was how unexpected some of the pairings looked on paper. The vintages were moved around the menu in a way that did not seem obvious at first, yet everything had clearly been studied to perfection so that each wine was served at the right moment, with the right dish, and in the right sequence.

A huge thank you to the team at Anne-Sophie Pic, Le Normandie, for such outstanding ex*****on, and to Laurent Delassus for sharing this very special evening with us. 🙏
