Happy Saint Patrick's Day everyone! Here's a green tea cocktail to help you craic out on this most festive of occasions! (watch for the green tea martini later tonight)

Kay Dillon’s “Mai Thailand”:
2 cups light rum
1 cup golden rum
1 cup 151 rum
1 cup limon cello
1 ½ cups Big Red’s Almond Syrup
½ gallon matcha tea sweetened to taste with demerara
sugar
juice of 10 limes

Big Red’s Almond Syrup-
Using ¾ cup of demerara sugar and ¾ cup of water, mix until solvent. You can either do this over low heat, or in a lidded container – by application of vigorous shaking. Add to this simple syrup 1 ½ teaspoons of pure almond extract.

The more green tea you drink, the more it reduces your risk of stroke! Put the kettle on already!

Drinking four cups of green tea or one cup of coffee per day were each associated with about a 20 percent lower risk of stroke. That's according to a study of more than 82,000 men and women in Japan.

In addition to tea they also grow a lot of fruit in Mae Salong. Many delicious dried fruits. I'll try to get some pics of those soon. Overall they are doing an excellent job of maintaining the land and atmosphere up there.
