Somewhere along the way, we started choosing bananas by how they look instead of how they tasted.

Uniform yellow. No spots. Perfectly photogenic: Often, not quite there yet.

The dark spots were always the signal - starch turning to sugar, firmness giving way, aroma arriving.

Nature intended this. We just forgot to wait.

A field note for May.

Som Bang Mod. Still findable in Chom Thong if you know where to look. Sweet, thin-skinned, freckled peel. The kind of orange that tastes like old Bangkok. Thirty-two growers left.

Puang Manee. Named after the woman whose tree it came from. One mother tree in Chanthaburi. Caramel and butterscotch when you reach the flesh. Harder to find every season.

Fa Lan. Eat it green. With salt. With chilli. That snap when you bite into it — that's the whole point. Most people have never tasted one.

Nang Lae. A Chiang Rai pineapple. Greenish-yellow even when perfectly ripe. The skin tells you what's coming before you open it.

Nam Wa Dam. Ancient. Dark-skinned. Deep flavour. Too rare for the commercial supply chain. Still here, somewhere.

We're writing them down because that's the first thing.
