The honey process in specialty coffee is a balance between washed and natural processing. First, the skin of the cherry is removed, but part of the sweet mucilage is intentionally left on the bean. This sticky layer — often compared to honey — is what gives the method its name.

The beans are then dried on patios or raised beds, and throughout the day they are turned by hand several times to ensure even drying and to prevent over-fermentation or excess moisture. Every stage is carefully monitored, from the thickness of the layer to the humidity level.

The drying process takes several weeks and requires constant attention. The result is a cup with bright natural sweetness, soft acidity, and pronounced caramel and fruity notes.

This is P. Apple, and it’s from her farm we have the specialty coffee for that Americano you drink every day. She kindly told us and showed us how the natural processing of coffee beans takes place.

The natural process begins with selecting perfectly ripe cherries. The beans are not removed from the fruit — they dry inside the whole cherry. The cherries are spread in thin layers on patios or raised beds and turned daily to ensure even drying. Under the sun and fresh air, the fruit slowly dries, and its sugars gradually infuse the bean, shaping the flavor of the future cup.

This process takes several months, guaranteeing natural sweetness and vibrant fruity and berry notes in the coffee.

Here’s a simple breakdown:

☀️ Natural (Dry) Process
The coffee beans are dried together with the fruit and skin still on.
This usually creates a sweeter, fruitier, and more full-bodied flavor profile.

🍯 Honey Process
The skin is removed, but part of the fruit (mucilage) remains on the bean during drying.
The result is often balanced, sweet, and smooth.

💧 Washed Process
The fruit and skin are completely removed before drying.
This produces a cleaner, brighter cup, often with more noticeable acidity.

The processing method directly influences how your coffee tastes.

If you enjoy sweeter, fruit-forward flavors — choose natural or honey.
If you prefer a cleaner, crisper cup with lively acidity — go for washed.
