Dofann Cheese ทำไมถึงต่าง ?
คำตอบคือ Lactique Process ค่ะ
(Lactic Coagulation Process) คือ
กระบวนการตกตะกอนนมด้วยกรดแลกติกที่เกิดจากการหมักของแบคทีเรียดีตามธรรมชาติ โดยแทบไม่ใช้เอนไซม์ Rennet เลย

ชีสทั่วไป = ใช้ Rennet ทำให้ตกตะกอนเร็ว เนื้อจะแน่น ยางๆ
DoFann = ใช้ Lactique Process

📝คือการปล่อยให้แบคทีเรียดีในนม ค่อยๆ สร้างกรดแลกติกตามธรรมชาติ จนทำให้นมตกตะกอนเองอย่างช้าๆ

นี่คือวิธีดั้งเดิมของฝรั่งเศส ที่ใช้เวลายาวนานกว่า 20 ชั่วโมง เพื่อให้ได้ชีสที่มีรสชาติเปรี้ยวละมุน (Tangy) เนื้อสัมผัสเนียนนุ่ม และย่อยง่ายกว่าชีสทั่วไป
