From bright green to deep mauve, the color of the olive shapes the character of the oil.

We have both indigenous Chemlali and Zarrazi varieties on our farm. Greener olives bring floral and fruity notes, while the mauve olives give a fuller oil with more acidity and depth.

Traceability covers every step we take from tree to bottle.

We work with a fully traceable, organic process certified by Eco-cert. Every stage — from harvest to transport to storage — is documented through a rigorous tracking system, with strict monitoring of time, temperature, and origin.

Our olives are picked and cold pressed within 24 hours to preserve true extra virgin quality. They are harvested and transported to the our organic press in Zarzis the same day. Once pressed, the oil is then stored in our tanks in Gabès, at a carefully controlled temperature between 18–22°C to maintain its integrity. Before bottling, the oil is filtered to remove any remaining olive particles, ensuring clarity and stability.

This process is essential to creating the highest-possible quality premium olive oil for our Tacape Collector’s Bottles.
