The perfect s7an tounsi 🫶
Melting in the Paris heat got me craving a s7an tounsi, but not just any….THIS one. S7an tounsi literally translates to « Tunisian plate »: tuna, poached egg, potatoes harissa, tomato, cucumber, pepper, cured lemon, olive oil. Pretty much the same ingredients you find in different forms across all the other simple everyday staples.
The thing is, whether in Tunisia or in the diaspora, a good s7an tounsi is harder to find than you’d think. Decades of industrialisation, urbanisation, rising poverty (the result of political corruption and a globalised neoliberal economy) have simplified or even transformed a lot of the traditional street food culture. In a post-colonial context like ours, this means we increasingly don’t know our recipes anymore, and don’t understand our ingredients, and we’re losing a sense of ritualistic food culture. Anyway, all of this to say, I love a place that does it right and stays untouched. Cause in a world of concepts and fast trends, I like a place that simply exists and doesn’t need to be anything other than what it is. Here you got one item on the menu, or folded into a baguette if you want the classic casse-croûte. Everyone comes early, eats and leaves happy (wanting more!! 😋😋)
