Boiled Crayfish with Dill Sauce Recipe

Ingredients

For the crayfish

* 1 kg live crayfish
* 3 litres water
* 3 tablespoons sea salt
* 1 lemon, sliced
* 3 bay leaves
* 1 teaspoon black peppercorns
* 3–4 dill stems

For the dill sauce

* 100 g butter
* 3 garlic cloves, finely chopped
* 2 tablespoons fresh dill, finely chopped
* 1 tablespoon lemon juice
* ½ teaspoon salt
* ¼ teaspoon black pepper

Preparation

1. Rinse the live crayfish thoroughly under cold running water.
2. Bring the water, salt, lemon, bay leaves, peppercorns, and dill stems to a rolling boil.
3. Carefully add the crayfish and cover the pot.
4. Once the water returns to a boil, cook for 6–8 minutes, until the shells turn bright red.
5. Turn off the heat and leave the crayfish in the cooking liquid for another 5 minutes to absorb the flavour.
6. Melt the butter in a saucepan. Add the garlic and cook gently for about 30 seconds.
7. Stir in the chopped dill, lemon juice, salt, and black pepper.
8. Drain the crayfish and pour the warm dill sauce over them.
9. Serve immediately with lemon wedges and fresh bread.

Serving suggestion: For a stronger dill flavour, let the boiled crayfish rest in the warm dill-butter sauce for 2–3 minutes before serving.
