Cherry & Pineapple Tart Milk Punch

Ad 21+

Over a decade ago when I first started in bars, putting amaretto and something cherry flavoured together to give that Bakewell tart flavour

You can make it like in the video or swap the ratios of amaretto and rum for a very indulgent dessert style drink

Cherry can come in various forms but I rather enjoy the cherry syrup

45ml/1.5oz Rum (Spanish style aged rum and pineapple rum both work well here)
20ml/0.66oz Amaretto
15ml/0.5oz Cherry syrup
22.5ml/0.75oz Lemon juice (use like if you prefer, but for me lemon worked better here)
60ml/2oz Pineapple juice
60ml/2oz Whole milk
Pineapple fond and cherry garnish
I add syrup at the end so it keeps more of its colour

Kiwi Gin Fizz

Yes I used Creole style bitters for the top of the cocktail, give me all the aromatics

I often enjoy adding a touch of tropical flavours to gin cocktails, a pairing I still think is underrated. Add some gin, some garden flavours and something tropical. make this process very easy for me, all sorts of tropical flavours to explore, in this instance the kiwi syrup went down rather well

The cocktail is fantastic for the home bartender, as you won’t get annoyed at you for all the shaking. But worth it for the foamy goodness.

Tips for the foam

Shake lots, like when you think you’re done keep going for a few more seconds, especially on the dry shake
Put the drink in the freezer BEFORE adding the soda, I find this allows for more height on the foam
Poke a hole in the middle with your straw and pour soda in, once you’ve taken it out the freezer

45ml/1.5oz Gin (something citrus or tropical)
15ml/0.5oz Elderflower liqueur
15ml/0.5oz Kiwi syrup
15ml/0.5oz Lime juice
60ml/2oz Apple juice
Egg white
Skeleton leaf (optional) and bitters to garnish
