Seared tuna tataki:
🐟 tuna steak
🧂black & white sesame seeds
🥄 1 tbsp soy sauce

brush the tuna with a tbsp of soy sauce, then coat it in sesamw seeds, patting them in. transfer to a pan and sear on medium-high heat for 20 seconds per side, searing the entire surface. slice with smooth gliding movements.

restaurant-inspired smacked cucumber salad:
🥒 1 cucumber
🥄 2 tsp itsu crispy chilli oil
🥄 1 tbsp soy sauce
🥄 1 tbsp vinegar
🧄 1/2 garlic clove [grated]
🌱 2 stalks green onion

How could you resist this Jumbo crispy macadamia crusted shrimp by ?

This crispy, golden shrimp is coated in buttery macadamia nuts with a hint of garlic, citrus, and sweetness from honey — this crowd-pleasing dish is crunchy on the outside, juicy on the inside, and packed with tropical flavor in every bite. Perfect as an appetizer or served over rice, salad, or lettuce wraps for a light and flavorful meal!

INGREDIENTS
1 lb bag, jumbo shrimp. Peeled, deveined, rinsed, and dried.
1/2 cup macadamia nuts, finely chopped
1/4 cup panko breadcrumbs or corn flour crumbs (or gluten-free breadcrumbs)
1/2 tsp garlic powder
1/2 tsp lemon zest
Salt, to taste
2 tbsp honey
1 egg, beaten

INSTRUCTIONS
For the oven: Preheat to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
For the air fryer: Preheat to 375°F (190°C) for 3-5 minutes. Lightly spray the air fryer basket with oil.
In a shallow bowl, combine the chopped macadamia nuts, breadcrumbs, garlic powder, lemon zest, and salt.
Place the beaten egg in one bowl and the macadamia coating mixture in another.
Dip each shrimp piece into the beaten egg, then press it into the macadamia mixture to coat evenly.
For the oven: Arrange coated shrimp pieces on the prepared baking sheet.
For the air fryer: Place them in a single layer in the air fryer basket, ensuring they don’t overlap.
Bake for 10-12 minutes, or until the shrimp is cooked through and the crust is golden brown.
Air fry for 8-10 minutes, shaking the basket halfway through, until the shrimp is cooked through and the crust is crispy and golden.
Drizzle honey over the top of the crispy shrimp bites.

Recipe
* 2 Chilean sea bass fillets ( or any white fish)
* 2-3 small Yukon gold potatoes
* Clarified butter or ghee
* Kosher salt and black pepper
* Butter
* Fresh lemon juice
* Flat leaf parsley

1. Slice potatoes thin on a mandolin, rinse, and dry.
2. Season fish, brush with clarified butter, shingle potato slices across the fillet. Brush with butter, cover with parchment, refrigerate 30 minutes.
3. Flip assembly parchment-side down into a hot clarified-buttered pan. Cook until golden, flip, baste, and rest.
4. Wipe pan, melt butter, add lemon juice and parsley. Swirl one minute.
5. Plate over wilted spinach with sauce.

Enjoy!

You’ve made some amazing seafood now you need a fabulous sauce to go with it…

has created this fabulous way to serve seafood, it also works on grilled chicken, chicken cutlets and vegetables like asparagus and broccolini too.

🍋Lemon Dill Sauce

🌿Ingredients:
• 1 small shallot, diced
• 2 cloves garlic, sliced
• 1 tbsp butter (to sauté aromatics)
• 1/2 stick butter (cut into slices, reserve to finish sauce)
• 1/3 cup white wine
• 1/3 cup white wine vinegar
• Heavy cream (about 2 tbsp)
• Seasoning: 1 tsp garlic & onion powder, 1/2 tsp dried mustard, salt and white pepper (I suggest a small pinch of white pepper) to taste

👉🏼Method:
• Sauté shallot in butter until translucent, couple minutes
• Add garlic and let bloom (until fragrant, about 45-60 seconds)
• Add equal parts vinegar and white wine
• Reduce by half, add seasonings and then reduce another couple minutes
• Strain for a smooth sauce; return to heat on low to medium low
• Add a splash of cream & whisk to incorporate. You can add more depending on the consistency you prefer
• Add 1/2 stick cold butter in cubes, a few at a time, whisk and let thicken
• Add fresh dill, a squeeze of lemon and serve. (If you really love dill flavor; you can add some extra dried dill here too.)

🧈🍋Couple notes on this sauce to prevent it from breaking (and any other sauce where dairy and acid are involved)

1) watch the temp of the saucepan before adding cream, make sure it’s low enough
2) add heavy cream, light cream breaks more easily
3) add lemon right before serving, or your sauce may break

This recipe has the ultimate crunch!! .bbq Cajun Shrimp Chips 🍤 This is one of those in the moment creations that ended up turning out amazing.

Ingredients:
• Shrimp
• Spring roll paper
• Bold Cajun Seasoning

Cajun Remoulade
• 1/4 c mayonnaise
• 2 tbsp Jalapeño ketchup
• 1/2 lemon squeezed
• 1 tbsp Everyday hot sauce
• 1 tbsp garlic powder
• 2 tsp Cajun seasoning

Instructions:
1. Add all remoulade ingredients in a bowl and mix.
2. Cut spring roll paper into 4 pieces.
3. To place parchment paper onto tortilla press, then shrimp, Cajun seasoning, another piece of parchment paper and press down firmly.
4. Peel carefully from parchment paper, fold excess shrimp into center then fry at 350F for 1-2 mins.
5. Serve with Cajun remoulade and enjoy 🤙🏽

Ingredients:
200g Shrimp (Raw weight)
½ Tbsp Minced Garlic
1 Tsp Grated Ginger
5ml Sesame Oil
1 Tsp Salt
1 Tsp White Pepper
1 Tsp Corn Starch
Green Onions
3 Rice Paper Sheets (Thin)
Sesame Seeds

Sesame Oil Soy Sauce:
3 Tbsp of soy sauce
½ Tsp of sesame oil
Pinch of chili flakes/gochugaru

Instructions:
1. Into a bowl combine the following ingredients: 200g Shrimp (Raw weight), ½ Tbsp Minced Garlic, 1 Tsp Grated Ginger, 5ml Sesame Oil, 1 Tsp Salt, 1 Tsp White Pepper, 1 Tsp Corn Starch
2. On a medium high heat pan, spray with cooking spray and place about 1 Tbsp of the filling mixture, leaving ample space around each one.
3. Wet the rice paper sheet and cut into quarters. Overlap two pieces, place on the shrimp mixture and pinch to ensure it bonds to the mixture.
4. Once all the fillings have been covered, add a splash of water and steam until the mixture is cooked through (took around 5-7mins) or until all the liquid in the pan has evaporated.
5. Top with green onions, sesame seeds, soy sauce mixture and enjoy!

A favorite ways to prepare tuna and the tortilla crisps are dusted with some spicy seasonings and then they create a little vessel for the fresh tuna and salsa to sit. This one is super simple, light and great for summer. there is no baking, you could definitely just serve with store-bought tortilla chips and it would be just as good❣️
