This chicken is cooked well beyond the safe internal temperature, but people will still swear it’s raw.
The truth is, chicken can be perfectly safe to eat as long as it reaches an internal temperature of 165°F (74°C).
That pink color doesn’t automatically mean it’s undercooked, especially in dark meat like thighs or drumsticks. Dark meat just has more myoglobin, a protein that stores oxygen in muscle tissue, which can cause the meat to stay pink even when fully cooked. Bone marrow can also leak into the surrounding meat during cooking, adding to the color.
Color is not a reliable indicator of doneness, a meat thermometer is.
