會取名為炸蛋是因為跟金門的蛋餅不同，此炸蛋蔥油餅是用炸的餅皮以及用炸的蛋所包起來的，還可以加上不同的料，起司，肉鬆，火腿，柴魚，雙蛋，小黃瓜，玉米，蛋還有區分 熟蛋跟不熟蛋以及加辣或不加辣
現桿餅皮，現點現炸，皮跟蛋分開炸，再組成炸蛋蔥油餅。
