空間氛圍清淡的美，
烹調器具很有土味，
簡單幾樣的食材皆是有自主個性單一體，
在小造湯院，
這裏只強調器具氛圍的來由與每個食材提供者的心意，
這裏也只盡量提供原貌的食物，
在小造湯院，
鍋物是慢慢的、雅致的烹調，
涮涮是傳統的、有節奏性的，
而不應囫圇吞棗地用部隊式雜燴，
小造湯院可能不只是一家鍋物販售，
因為這裏只有一張木桌，
每次時段只能款待八位客人。
