士久扁食創立於1996年，從路邊攤兩張桌椅開始做起，草創初期因遇到奇美醫院電腦室員工大力捧場，即使吃得滿頭大汗也天天上門光顧，引起路人好奇，就此聲名遠播，後來一路從開元路搬遷至現址，儘管位居巷弄，仍吸引許多人特地前來品嚐。
店裡的扁食外觀上就與眾不同，包成長條狀，裡頭放入整顆草蝦蝦仁，口感富有嚼勁，搭配以雞骨、柴魚及獨家調味配方熬煮而成的高湯，香氣濃郁，入口清爽鮮甜不油膩，深受老饕喜愛。
