A story that begins in the Basque Country and continues in Taiwan.

Our interpretation of the classic Basque Cheesecake is born from the meeting of two cultures. The creamy texture and beautifully charred character of the cheesecake meet 臭豆腐 (Chòu dòufu), one of the most iconic flavors of Taiwan’s street food culture.

We take the journey even further, pairing it with a carrot and kimchi sorbet — fresh, acidic, fermented and deeply savory — paying homage to the vibrant flavors found in the streets of Taiwan.
