A major achievement from the first training for 2026 with an amazing group of enthusiastic professionals in the hospitality service industry here in Zanzibar. A positive initiative taken by to build capacity of service professionals through learning.

Each attending member had an amazing backstory and personal experience in this industry and they all shared their interests in learning and upgrading their Basic skills.

The Basics of the Bar course covers the practical fundamentals that applies in the everyday operations of a Bar, and service at any hospitality establishment from customer engagement/guest interaction, Menu psychology, Bar service fundamentals, Basic Spirits knowledge & professionals standard behind the bar.

We will be running a series of courses this year through the so please stay tuned for more.

You don’t need any coconut liqueurs for this!!

This is a basic 3 recipe Pina Colada with Light white Rum, I am using Captain Silver but it can be with any white rum of your choice, fresh pineapple juice and coconut cream recipe. You can always garnish however you like to make it look presentable.

Here’s a temperature serving guide depending on the style or red grape 🍇

Light-bodied Reds (13-15°C) - Pinot Noir

Medium-bodied Reds (15-18°C) - Merlot, most Pinotage, Cabernet Franc, Grenache, Barbera, Sangiovese

Full-bodied (18-20°C) - Cabernet Sauvignon, Syrah/Shiraz, Malbec, Merlot, Zinfandel, Tempranillo

The right amount of dilution from proper ice or a splash of water, helps balance the intensity of the alcohol and enhances the drink’s flavors.

As ice melts in a drink or cocktail, it lowers the drink’s temperature, which can help mute overly strong flavors especially in spirits like whisky or gin.

The more you dilute a cocktail, the lower the alcohol content. So, the amount of ice, water or mixer added can determine how potent your final drink will be.

If you ever want to impress your guests or just want a little sip sip at sunset, then this is one of them ones!

I used for this one due to its bold and exotic flavors inspired by the ancient Spice Route! Its warm notes of coriander, cardamom and black pepper pair perfectly with the subtle floral elegance of organic butterfly pea flowers for a herbal Gin & Tonic like no other!

Recipe highlights:
- 50ml or any Gin of your choice infused with dried organic butterfly pea flowers from

- 150ml Tonic soda

Garnish: Orange wheel for sweetness, rosemary sprig, a dried butterfly pea flower and star anise

Starting of the year with an aromatic blend of sweet spice and creamy vanilla Syrup 😋

This is an easy one to do and you can recalibrate the recipe depending on how potent you prefer your syrup to be for your everyday cocktails.

All you need is:
- 3-4 cinnamon sticks
- 1 vanilla pod (scrape out the guts)
- 2:1 Sugar to water ratio

Method:
Combine the sugar and water in a pan over medium heat, stirring until the sugar is fully dissolved. Add the cinnamon sticks and vanilla pod to the syrup. As soon as you see bubbles, cover and turn off the heat. Let sit/steep for 20 minutes or longer depending on how concentrated you want the flavor to be, then strain, label, date and refrigerate.

When the sun is out, I'm going to refresh myself with this 🏖️

Recipe:
- 50ml Hibiscus-infused Dos Mexicanos Silver Tequila
- 50ml Fresh Grapefruit Juice or Orange juice if it's an Orange Paloma
- 20ml Freshly squeezed Lime Juice
- 15ml Simple Syrup
- Top up with soda
- Garnish: Dried hibiscus & a grapefruit or Orange twist
- Salt rim: with crushed dried hibiscus

For the Hibiscus infusion:
- 4:1 Tequila to dried hibiscus and leave for a few hours and strain out the infused tequila.

NOTE: Leave longer or shorter for preferred strength or flavor.
