Ореховый тарт со сливочным кремом и клубникой от Юлии Высоцкой

Ингредиенты:
▫️мука — 180 г
▫️сливочное масло — 90 г
▫️сахарная пудра — 60 г
▫️подсушенный измельченный фундук — 40 г
▫️яйца куриные — 1 шт.
▫️яичные желтки — 1 шт.
▫️ванильный экстракт — 1 ч. л.
▫️соль морская — 1 щепотка
Для крема:
▫️сыр сливочный — 400 г
▫️сливки жирные — 250 мл
▫️сахарная пудра — 3 ст. л.
▫️ванильный экстракт — 1 ч. л.
Для украшения:
▫️клубника — 400 г
▫️сахарная пудра — 1 ч. л.

Способ приготовления:
1. Духовку предварительно разогреть до 180°С.
2. Приготовить тесто: предварительно охлажденное сливочное масло нарезать кусочками, поместить в чашу блендера, всыпать муку, соль и взбить все в мелкую крошку, добавить сахарную пудру, фундук, ванильный экстракт, желток и все взбить, затем, не выключая блендера, частями влить 25–30 мл ледяной воды и взбить еще немного.
3. Дно формы диаметром 26 см выстелить бумагой для выпечки, выложить тесто и сформировать тонкий корж с бортиками, часто наколоть его вилкой, накрыть бумагой для выпечки и всыпать бобовые.
4. Выпекать корж в разогретой духовке 20–25 минут, затем снять бумагу с бобовыми.
5. Яйцо размешать вилкой, смазать подпеченный корж и выпекать еще 5 минут, затем вынуть из формы и полностью остудить.
6. Сливки взбить блендером с насадкой-венчиком в пышную массу.
7. Приготовить крем: половину сливочного сыра и сахарной пудры поместить в глубокую миску, влить ванильный экстракт и растереть ложкой, добавить оставшийся сливочный сыр и сахарную пудру, перемешать, затем в два-три приема ввести взбитые сливки и все вымешать.
8. Клубнику разрезать пополам.
9. Выложить крем в остывший корж, сверху разложить клубнику и посыпать сахарной пудрой.
