Current pate' plate! 🐖 🐔 Mushroom and
landeline terrine, smoked pepper country pate', fennel head cheese and peppercorn spiced chicken liver mousse. Accompanied by thyme crackers, seasonal pickles and smoked mustard. All the terrines and pates on the board are made from our last pig. Come by and see us!

We are so excited to have a special off menu item this weekend! Allium marinated Berkshire Kan Kan from the last pig we received from . Served with a condiment of burnt fennel, spicy and sweet Texas peppers along with .suxx lacto fermented celery! This is not on the menu so be sure to ask about it!

Petra and the Beast
A couple items going on the tasting tomorrow. Pulled this morning, lonza cured in 5 month aged mole and shio Koji, has such an nice rich umami finish with mild acidity. 10 month eggplant soured with cumin, fig leaf and buttermilk whey going with a shio pickled shrimp course.

Red Wattle is one of our favorite breeds of pork. They are a hardy breed that have a docile temperament and love to forage. The breed was originally introduced to the Gulf Coast region in the mid 1800's or earlier and spread throughout North America. By the 1950's the breed was largely extinct until two East Texas ranchers found several groups of them and began breeding them. No breed of pork is more uniquely representative of Texas, and in 2016, we helped get the breed placed in the Ark of Taste, a directory of endangered unique regional heritage foods.
We are very excited to be working with in Abbott, TX to source pasture raised Red Wattle!

New dish :: Pork and Cabbage ::
A duo of pork :: the loin is roasted over coals & the other is a cabbage roll with shoulder, ham, offal, preserved peppers & Carolina Gold rice. The sauce is a Benton’s bacon/sea island rice pea/ mustard pork jus & to finish the dish is charred thinly sliced cabbage tossed with olive oil, salt & lemon
