The life of a Microgreen is short. The goal is to grow the strongest baby plant in a short amount of time. These plants are 3 to 10 days old. They will be ready for harvest in a few days for market.

Great day at the farmer market today. Got an opportunity to visit with a few of the vendors and got some pictures of their booths to share. Come on down every Saturday from 8:30-12:00. Always something good to find here.

We had a bountiful pea shoot harvest last week. We put them to good use in a stirfry. The secret is to cook til just wilted. You can use any meat you like or leave it out all together. This turned out great!

Just like peas, pea shoots offer many nutritional benefits. While low in macronutrients like carbs and fats, pea shoots contain a good amount of protein and fiber. They are also rich in vitamins. A serving of 100 grams of pea shoots contains:

4 grams of protein
3 grams of fiber
280 micrograms of vitamin K
79 milligrams of vitamin C
340 micrograms of vitamin A

Sunflower Microgreens are high in fiber, protein, essential fatty acids, vitamins A, B complex, C, D, and E. Calcium, phosphorous, iron, iodine, potassium, magnesium, zinc, manganese, copper, and chromium.

They have a distinct nutty taste like a sunflower seed. They are crunchy and full of flavor. They can be enjoyed on sandwiches, in salads, and in wraps.

Broccoli microgreens are considered the most nutrient-rich of all microgreens. They contain a high amount of sulforaphane, which is known for its cancer-fighting properties. Broccoli microgreens also have high levels of vitamins A, C, and K, as well as calcium, iron, and potassium.

These were planted 7 days ago. They are ready for harvest in a day or two when the first true leaf appears.

Basil Microgreens are a little finicky to get started. I will be curious to see how an entire tray grows for me.
