Abington, MA backyard duck egg farm. We have ten duck hens that produce eggs non-stop throughout the year including the winter months. We average 60 eggs a week.
Delicious, bigger than chicken eggs and are great for baking. Full and half dozen.

From the weekend...Quack Saloon Duck Egg breakfast tortilla. Bacon, onion, garlic, basil, 3 types of cheese and 3 duck eggs cooked super slow between two tortilla shells.

BACON DUCK EGG QUICHE
INGREDIENTS:
1 Pre-made Pie Crust (I usually get an organic wheat crust from the store’s freezer)
3 Duck Eggs
1/3 Cup Crème Fraîche (you can sub heavy cream)
1/2 Cup Whole Milk
5 oz Gruyere, shredded
1 Package of Bacon
1 Shallot, diced
1/4 tsp Salt
1/8 tsp White Pepper
2–4 Slices of Prosciutto
INSTRUCTIONS:
1. Preheat oven to 425° .
2. Cook the bacon until crisp. Leave the grease in the pan. Drain bacon on paper towels and chop when cool.
3. Heat the grease up over medium heat. Add the diced shallot and cook for 2-5 minutes until translucent.
4. Mix the bacon and shallots together and evenly fill the bottom of the pie crust.
5. In a large bowl, mix together the duck eggs, crème fraîche, whole milk, salt, and pepper. Once combined, mix in the shredded gruyere.
6. Gently pour the mixture over the bacon and shallots. Spread evenly.
7. Bake for 25-30 minutes, until a toothpick comes out clean when inserted and removed. Cut and serve immediately.
8. To prepare the prosciutto, cut it into long, thin pieces. Heat up a pan over medium high heat. Place the prosciutto in the pan and cook for a few minutes, flipping occasionally. Remove and place on a paper towel until ready to top the quiche.

Duck Egg Omelet
Olive oil
1 handful shredded greens
1 clove garlic, chopped
1/4 medium onion, sliced
1/2 cup veggies of your choice, chopped
2-3 large duck eggs
1 pinch salt and pepper, to taste
1/3 cup cheese, shredded (optional)
1 pinch herbs of your choice (optional)
Instructions
Using a healthy amount of olive oil, sauté shredded greens, sliced onions and veggies. Cook them according to their density.
When veggies are nearly done, toss in chopped garlic and crack the duck eggs on top. Stir the eggs in a bit to settle down into the veggies, and lower heat to medium-low.
Salt and pepper omelet to taste, and top with cheese or herbs as desired.
When the top of the eggs are beginning to appear cooked, use a spatula to flip the omelet over itself, forming a half moon shape.
Slice and serve! Refrigerate leftovers, they are great sliced up on a salad.

Duck vs Chicken Egg
Basic differences:
In general, duck and chicken eggs are quite similar.
Still, there are a few specific features that set the two apart.
Appearance:
The most noticeable difference in physical appearance is the size of the eggs.
A duck egg can be 50–100% larger than an average-sized chicken egg. Thus, eating one duck egg is like eating one and a half or two chicken eggs.
As with chicken eggs, the color of duck eggs varies based on the breed and diet of the duck, the environment it’s raised in, and it's genetics.
Many duck eggs have white shells, but they also come in shades of pale gray, green, black, and blue. (Ours are white)
The yolks also differ in both size and color. While the yolks of chicken eggs are usually a pale or bright yellow, duck egg yolks are a deeper shade of golden orange. Compared with a chicken yolk, a duck yolk tends to appear more vibrant.
Duck egg yolks are also larger, partly because duck eggs are generally larger than chicken eggs.
Taste:
The vibrant yolk of a duck egg not only looks bold, but some people think it gives the egg a richer flavor as well. People often describe duck egg yolks as tasting creamier than chicken egg yolks.
